Barbecue Roasted Salmon
4 (6 Oz.) Skinless Boneless Pier 33 Salmon® portions
2 Oz. pineapple juice
1 Oz. fresh lemon juice
1 Tbsp. Brown sugar
4 Tsp. chili powder
2 Tsp. grated lemon rind
¾ Tsp. cumin
½ Tsp. salt
¼ Tsp. cinnamon
1) Combine pineapple juice, lemon juice and salmon portions in a sealable plastic bag, seal and marinate in refrigerator 1 hour, turning occasionally.
2) Preheat oven to 400°F.
3) Remove salmon portions from bag and discard marinade.
4) Combine brown sugar, chili powder, grated lemon rind, cumin salt, and cinnamon and rub mixture over the salmon.
5) Place on a baking dish coated with cooking spray and bake at 400°F for 10 minutes or until salmon flakes easily when tested with a fork.
