Garlic and Herb Crusted Salmon

Ingredients
2 Pier 33 Gourmet Salmon
2 tbsp. garlic and herb seasoning
Salt and pepper
4 tsp. olive oil
1 red pepper
1 green pepper
1/2 yellow pepper
1/2 sweet onion
2 tbsp. butter
1 tsp. dry thyme
1/3 cup. chicken stock
1 pint cherry tomatoes
1/2 tsp. garlic, minced
1 tbsp. balsamic vinegar
5 med red potatoes
4 tbsp butter, melted
1/2 cup. heavy cream
1 tsp. italian seasoning

Instructions
1) Place filets on a plate. Drizzle with 1 tbsp. olive oil, season with salt and pepper, and coat with Garlic and herb seasoning. Let them sit for 5-10 min. Sear off in a pan with 2 tbsp. oil. Skins side down first for 5-7 min. Flip over for another 5 min. Place in a 400°F oven for 10 min.
2) In a sauce pan, boil potatoes 8-10 min until tender. Strain. Add back to sauce pan and mash. Add melted butter, heavy cream, and Italian seasoning. Season with salt and pepper.
3) In a sauté pan with 2 tbsp. butter, add sliced onion. Cook until translucent about 5-8 min. Add peppers and dry thyme. Season with salt and pepper. Add stock and cook for 5-7 min.
4) In a bowl, place cherry tomatoes, garlic, olive oil, salt and pepper and mix well. Add balsamic vinegar.
