Mexican Mussels in Mole Sauce
1 pkg All Natural Pier 33 Gourmet Mussels
12 flour tortillas
12 oz. chocolate chips
1 tbsp. chili powder
1 can Low sodium chicken broth
1 cup finely chopped onion
2 cloves finely chopped garlic
3 oz. chopped chili peppers
1 can finely diced tomatoes
1 tsp. ground cumin
1 green or red pepper
1/2 cup finely chopped toasted pumpkin seeds
1) Combine all ingredients but mussels into a large sauté pan, and heat gently until chocolate chips are completely melted.
2) Stir until very smooth.
3) Add thawed Pier 33 Gourmet Natural Mussels and cook only until completely warmed through.
4) Serve on a large platter, with warm flour tortillas. And top with toasted pumpkin seeds.
