Mussels and Pasta Parmesan
1 pkg. Pier 33 Gourmet Mussels
1 tbsp. olive oil
1 clove garlic, thin sliced
6-7 plum tomatoes, chopped
1/2 cup parsley chopped
1/2 cup freshly grated Parmesan cheese
1 lb. your favorite pasta (Spaghetti or Linguine work best) cooked al dente.
1) In a sauce pan heat the olive oil.
2) Add garlic and cook on medium heat for 2 minutes.
3) Add tomatoes and simmer on med/high for 5 to 7 minutes.
4) Pour sauce over pasta, sprinkle with chopped parsley and grated parmesan before serving.
