Smoky Bacon Langostino Lobster Pizza with Charred Lemon Greens
3 slices thick cut applewood smoked bacon
1 large lemon, cut in half
1 pre-cooked pizza crust
1 (5.2 oz.) package pepper or garlic and herbs boursin-style cheese
1 1/2 cup. freshly grated pepper-jack cheese
2 tbsp. finely chopped fresh chives
1 (8 oz.) of Pier 33 Gourmet Langostino Lobster Tails, thawed
1 cup. mixed greens
1) Preheat oven to 475° F.
2) Cook the bacon in a 12-inch skillet until browned and crisp; drain on a paper towel lined plate.
3) Wipe out the pan used to cook the bacon, then heat the pan over high heat. Add the lemon halves placing cut side down into the hot pan. Cook the lemon halves until dark and charred looking on the cut side then set aside while preparing the pizza.
4) Place the pizza crust on a 12 or 14-inch round pizza pan. Spread the pepper or garlic and herbs Boursin-style cheese over the crust in an even layer then scatter the pepper-jack cheese over evenly. Sprinkle the chives over the cheeses. Arrange the Pier 33 Gourmet Langostino Lobster tails over the cheeses. Bake the pizza in the preheated oven for 11-14 minutes or until the cheese is bubbly and just starting to brown.
5) Transfer the pizza to a serving platter then scatter the cooked bacon and mixed greens over the pizza. Squeeze the charred lemon over the pizza to your taste (start with 1/2 then add more as desired). Cut into wedges to serve.
