Ingredients
2 (6 oz.) Pier 33 Gourmet Salmon Singles
2 tsp. dry white wine
Salt and pepper
4 oz. cream cheese
2 tsp. wasabi paste
2 tsp. soy sauce
2 tbsp. minced scallions
4 tbsp. olive oil
2 tbsp. sliced almonds
2 tsp. lemon juice
4 cup fresh spinach
1/4 cup shredded carrots
2 tbsp. dried cranberries

Instructions
1) Cut each salmon portion pieces into bite size and into a bowl. Add white wine and salt and black pepper to taste. Rub the salmon pieces to blend well. Set aside.
2) In a large bowl, mix together cream cheese, wasabi paste and soy sauce. Add scallions and mix to combine.
3) In a large non-stick skillet, heat 2 tablespoons of olive oil and add salmon pieces. Cook over medium-high heat until brown. Flip salmon pieces, reduce heat to medium and cook the other sides until cooked through. Then put salmons into the cream cheese bowl. Mix to combine. Add sliced almonds and mix gently.
4) In another large bowl, whisk together 2 tablespoons of olive oil and lemon juice. Add salt and black pepper to taste. Add spinach, carrots and cranberries to the bowl and toss to coat. Put the spinach mixture on a serving plate and put the salmon mixture over the spinach mixture.
